Break the eggs and separate the yolks in a bowl, then, use a stick to beat the yokes.

Add the dijon mustard and mix all together. Pour some Patio de Viana Arbequina EVOO, little by little, whilst you continue to beat the mix without stopping, until you achieve the required texture.

Later, add the salt & pepper to taste and the lemon juice, little by little, until you reach the acid level to taste.

In a glass TURMIX or a similar one, introduce the mayonnaise with the aromatic herbs. Crush it until the leaves are small enough for eating.

Now you can use it in your favourite dishes!
